We are proud to share this Green Truck Grocery family recipe! Mima Poverman's Noodle Pudding, or Kugel, has been passed down from generation to generation. Co-owner Adam Poverman's mother, Pamela Griffin, has been making this recipe for many years and was gracious enough to share it with you, our extended family!
16oz. pkg. egg noodles (broken into 3" pieces, if necessary)
1 stick (8 tablespoons) of unsalted butter
16oz. cottage cheese
16oz. sour cream
6 eggs, well beaten
1/2 cup sugar
1 tsp vanilla
1 cup raisins
Cinnamon, to taste
Preheat oven to 350°F.
Bring a large pot of water to a boil. Boil noodles according to directions on the package. Drain. Add butter to the pot and add the noddles to it and mix until the butter has melted.
In a large bowl, mix the cottage cheese, sour cream, eggs, sugar, vanilla and raisins together until combined. Fold the cheese mix into the noodles.
Butter a 13x9 inch glass casserole dish. Pour the mixture into the dish and sprinkle the top with cinnamon.
Place in the preheated oven and bake for 50-60 minutes, until golden brown on top. Let cool for one hour before cutting into squares and serving.
