Bananas Foster Waffles

Is it breakfast or is it dessert? We'll leave that up to you! Either way, this is a super easy and delicious way to fancy up waffles or pancakes. Bananas and pecans are added to a simple caramel sauce in this alcohol-free twist on the classic Bananas Foster.
Serves 2
INGREDIENTS
For Waffles:
Bob's Red Mill Waffle Mix—Buttermilk, 7 Grain, or Gluten-Free
2 tablespoons Spectrum Canola Oil
1 cup of water
For Bananas Foster Topping:
1/4 cup Tillamook Unsalted Butter, cut into 4 pieces
2/3 cup packed Wholesome Light Brown Sugar
1 and 1/2 teaspoon Singing Dog Vanilla Extract
1/2 teaspoon Spicely Cinnamon
1/4 cup Organic Valley Half & Half
2-3 bananas, peeled and sliced into rounds
1/4 cup Hummingbird Wholesale Raw Pecan Halves
Butter, whipped cream, or vanilla ice cream for serving
INSTRUCTIONS
For Waffles:
Heat a waffle iron for at least 10 minutes. Mix all waffle ingredients together in a bowl until just combined. Follow waffle iron manufacturer's instructions for measuring and cooking waffles.
For Topping:
Heat a medium skillet over medium heat. Add the butter and melt. Whisk in the sugar, vanilla, and cinnamon. When the mixture begins to bubble, slowly add the half-n-half, whisking constantly, until combined and it becomes smooth, about 1 minute. Add bananas and pecans and stir until coated and warmed through, about 1-2 minutes. Pour evenly between the two prepared waffles.
Top with a pat of butter, whipped cream or vanilla ice cream.
